You should make coconut sorbet.<br /><br />1 cup of water<br />1 cup of sugar<br />1 can coconut milk ("lite" coconut milk works well, too)<br />1/4 cup of shredded coconut<br />salt to taste<br />vanilla to taste<br /><br />Heat water, sugar, and salt in saucepan until sugar is completely dissolved. (For creamier/denser texture, bring water, sugar, and salt to boil and then let simmer until reduced by half.) Remove from heat. Whisk in coconut milk and shredded coconut. Add vanilla. Place in refrigerator until completely cool. Put in ice cream machine for about 30 min.
